Times are tough, jobs are scarce, and pay is low (nothing you don’t already know) this is the new reality of America’s economic standstill. Families are having a rough time paying their bills, keeping food on the table and relationships are being destroyed (I’m talking from the bottom of each of these).
It’s more important for me and my family to be financially stable than not to live like a typical in-debt family. Some of what I’m going to write is about my family being in the brinks of financial ruins, and finding a new life with in a farming community away from my husband’s family. I will leave good sound financial advice as we go thru a great class. I will show our struggles with all of life little UGGS. I’m also going to write about the growth of my relationship with my husband. In addition to all of my daily writings I’ll be sharing some really good recipes. All I keep telling myself is
“There is a light at the end of every tunnel.”
Today's Meal Plan
Canned veggies And
Meat Loaf
2 eggs
1/4 cup ketchup
1/4 cup water
1/2 cup minced onion
1 Tablespoon Worcestershire sauce
1 teaspoon salt
1 cup soft breadcrumbs (optional)
2-3 pounds ground beef
Glaze:
Ketchup, brown sugar and a touch of honey.
Mix together to form a thin paste.

1/4 cup water
1/2 cup minced onion
1 Tablespoon Worcestershire sauce
1 teaspoon salt
1 cup soft breadcrumbs (optional)
2-3 pounds ground beef
Glaze:
Ketchup, brown sugar and a touch of honey.
Mix together to form a thin paste.
Beat eggs in a large bowl. Blend in ketchup, water, minced onion, Worcestershire sauce, and salt. Mix in soft breadcrumbs if desired.
With your hands, mix ground beef with other ingredients. Mold into loaf and place on a rack in roaster or cake pan. Cover with foil and Bake @ 350 degrees for about an hour or until juices run clear and it's no longer pink inside. (May need to drain some of the liquid halfway through cooking time)
As soon as done, remove the foil and coat the top and sides of loaf with glaze and turn oven to broil. Watch it closely, and broil just until glaze starts to bubble. Remove from oven

Mashed Potato’s
Ingredients:
4 pounds Yukon gold potatoes, peeled and cut into quarters
salt and pepper
1 1/2 cups milk
3 Tablespoons butter
2 Tablespoons chopped Garlic
salt and pepper
1 1/2 cups milk
3 Tablespoons butter
2 Tablespoons chopped Garlic
Directions:
1. Put the potatoes and chopped Garlic into a large pot, add 2 Tablespoons salt, and cover with cold water.
2. Bring to a boil over medium-high heat and cook until the potatoes are tender, about 20 minutes. Drain well.
3. Mash the potatoes well with a potato masher until smooth and free of chunks.
5. Add the milk and butter mixture and season with salt and pepper. Mix well. I use my hand mixer to mix them.
